Visit the Fair Oaks Horticulture Center during the lunch break.  It's in Fair Oaks Park, right next door to the symposium location.  This two-acre living classroom for gardeners is maintained by UCCE Sacramento County Master Gardeners.  It features a demonstration orchard, a table grape vineyard, different berry varieties, a vegetable trial area, a pond garden and several different water-efficient landscape areas.  The Horticulture Center will be open during the symposium.
