Course description: Scientific principles and dynamic interactions involved in food production, food processing, nutrition, shelf life and marketing from differing viewpoints. Physical, biological and social science issues influencing the availability and safety of the food supply worldwide.

Topics include:Agriculture’s turning points such as the Green Revolution and Haber-Buschnitrogen synthesis, human population and future food production, farming sustainability, basics of human nutrition, agricultural economics, global warming and more.
